Cozy Christmas in the North - Holiday Baking & Winter Forest Walk
Hungarian Jeruzsálemi Kalács (Babka) Recipe: lilafuge.hu/jeruzsalemi-kalacs-babka/
Ingredients (for 2 loaves):
For the dough:
550g flour
100g of sugar
15g dried yeast
1 tsp salt
3 eggs
120ml cold water
150g soft butter + more for greasing the mold
For the filling:
150g dark chocolate
120g of butter
50g powdered sugar
30g unsweetened cocoa powder
1 tsp salt
100g walnuts, roughly chopped
For the syrup:
250g of sugar
150ml of water
Preparation:
Prepare the dough the night before: put the flour, sugar, yeast, and salt in the mixing bowl of the food processor, then add the three eggs and water. Mix, then gradually add the soft butter. Mix for 5-6 minutes until the dough comes together. Shape it into a ball and put it in a greased glass bowl, covered, in the fridge overnight (it can rise for at least 4, but up to 12 hours). It will rise by the morning - not to twice the size, but it doesn't need to. We should get an elastic, thick dough.
You can prepare the filling when the dough has risen: put the chocolate and butter in a medium bowl and melt it over steam. In a small bowl, mix the powdered sugar, cocoa powder and salt without lumps. Add the melted chocolate and butter, mix.
Divide the risen dough into two equal parts. Roll out one portion on a floured dough board into a 40×30cm rectangle. Spread with half of the chocolate filling and sprinkle with half of the coarsely chopped walnuts. Starting from one long side, roll it up tightly, then cut the roll in half lengthwise with a sharp knife. With the filling upwards, tightly weave the two sides of the cake together, making sure that the filling always faces upwards. Carefully transfer it to a buttered fruit bread form. Assemble the other portion of cake in the same way. Let it rise for 1 hour in a draft-free place, then bake in an oven preheated to 190°C (375°F) for 30 minutes.
While the cakes are baking, heat sugar and water in a small saucepan - just until the sugar melts - and then cool to lukewarm. Take the cakes out of the oven and pour the syrup over them while they are still hot - it is important to divide the entire amount of syrup between the two cakes. Cool completely, then slice. Enjoy!

    We visited back in 2013, it is the luck of the draw we saw lots of bears on 3 consecutive days. It’s well worth a visit, traveled over from UK. Great video by the way

    wow, i am at a complete loss of words. Thank you so much for this beautiful, beautiful video. First, All the breathtaking scenery, i felt strong emotions at those shots at the end. The beautiful waters coupled with the warm sunset light, the trains passing. It reminded me of the train trip i took last year to cross all Canada from east to west. 5000 kilometers of pure nature and your video and words have reignited those memories. And since you have created that effect on me, this video can truly be considered as a work of art.     I contemplated making this video more vlog-style, but it doesn't feel natural or authentic to me to pick up a camera when I’m emotionally unbalanced or stressed or things are going wrong, and to be honest it didn’t even cross my mind to film probably the most dramatic parts of what happened. I still hope you enjoy this account of the first two days of my trip! I think the car breaking down is the biggest surprise I've had while traveling so far...     Please note, when I am talking about simple and ordinary moments in the second half of the video, I am not referring to flying internationally, but rather to how I spent my time on that particular day. I realize I am incredibly fortunate to be able to travel in this way. With that being said, no matter where we are or what we're doing, there are moments scattered throughout our days and lives that are easy to overlook or forget, but sometimes shifting our focus or reframing our mindset can make a big difference.
