At the start of this year, we've decided to do a lot more documentation of our micro bakery and all of our bread-making processes. This is the first for the year and we'll be putting more intent into posting more moving forward. Cheers - JC

How I Turned A SHOE RACK Into Our Bread Display Shelf - Filipino Microbaker
Переглядів 8 тис.2 роки тому
I've always wanted a subjectively good-looking bread display but I'm not a good woodworker so I bought a shoe rack and turned it into our bread shelf at the farmer's market. Hoping to upload more microbakery updates soon. Cheers! - JC
Wildbreads: Beginnings at the UPLB Saturday Bazaar
Переглядів 8552 роки тому
Wildbreads started in 2018 at the UPLB Saturday Bazaar. So when we were asked by the UPLB Business Affairs Office to make a video sharing our experiences there, we were more than happy to go down memory lane. Here is a one-minute video of our beginnings making bread for the UPLB community. We look forward to seeing you again every Saturday starting April 23, 2022 at the UPLB Freedom Park.
Microbakery Weekend Life *UPDATE* (10 months later)
Переглядів 10 тис.3 роки тому
Three weeks ago (when we got back from a 21-day quarantine - yes, the household tested positive for COVID) I thought I'd film what I do again (and in general what happens in the microbakery). This is about 10 months after the first video I posted in April (work was filmed December of 2020). This time, though, I edited the videos after I was done with the day so it wasn't a monumental task for m...
Filipino Micro Baker - Croissant Production
Переглядів 10 тис.3 роки тому
In January of 2020, my sister Alex asked to move with me and Nicole to help out at the micro bakery. I asked her what she wanted to help with and she said just whatever work in the micro bakery is. A month into assisting me, she decided to make croissants. First thing I asked her was 'WHY?' lol So what we did is we read and looked up recipes/processes and eventually settled with Tartine's crois...
Woodfired Pizza Oven Build for Micro Bakery
Переглядів 1,1 тис.3 роки тому
Around December of 2020 I started my DIY pizza oven in the hopes of using it to sell pizza on Wednesdays from the micro bakery at home. The busy-ness of the holidays made me stop the build midway and finish around 4-5 months later. Because of the volume of breads we did on the holidays, we were able to save up for an Ooni Kkoda and 2 months after that, an Ooni Koda so finishing the build took a...
Filipino Micro Baker - Weekend Life (Part 2)

This is a continuation of the first video (Filipino Micro Baker - Weekend Life). Was so exhausted editing the over 300 clips that I chose to take a break and do this 3 weeks after I was done with the first one. lol Part 2 is basically just a pizza session with one Ooni Koda. We now have two Ooni's that we bring to the farmer's market. I recently filmed my *updated weekend life and will post tho...
Filipino Micro Baker - Weekend Life

Hi! I'm JC - a micro baker in the Philippines. This is a little glimpse of what I do in my little micro bakery on weekends. I "filmed" (lol) this weekend session early December of 2020. Wasn't able to film the holidays because it was crazy. Fast forward to today, we're doing so much more breads, pastries, and pizzas that editing this dragged for over 4 months (300 clips lol). My next weekend li...
Ooni Koda Unboxing and Full Review: A BEAST (with a slight mod)
Переглядів 7 тис.3 роки тому
I've always dreamt of having an Ooni ever since I saw their Kickstarter (they were Uuni then). Only until recently (8 years later) did I acquire an oven from them. Here's my full review and what I think of it from a small business pizza maker's perspective. Also, skipping this week's podcast for the Ooni Koda pizza oven review (didn't realise video editing to be so time-consuming lol)
Yummy food

I would have gone to Los Banos in a heartbeat if Im near you. All the best to you and you team, JC!

Do you use teflon to bake breads on?
Hello po..do you offer workshop?
Hi. How cold is your fridge? Tq
Hello.. Inspired by you. How long after baking from home did you decided to open a store?
Hi, means a lot! I probably baked for a good 7 months before I started selling at a local farmers market. But it's not because I was still "perfecting" my bread (truth be told, I still haven't 'perfected' this whole baking thing, nor will I ever do). My neighbors encouraged me to sell there because I was giving them too much breads. Haha. It was cool that my breads were getting sold so I had extra money to buy ingredients for another batch because I just wanted to make bread. I was obsessed. Haha
Hi. How do u clean your spiral mixers bowl? Mine cannot be removed. So I wipe it clean with soapy water and towel. I see you scrub with water. I like to do that too. How do u get all the water out? Tq ☺️
Hi! So sorry for the late response - I use a sponge to get all the water out of the bowl. Sadly, there's no other way (at least for me). Cheers :)
Thank You... Its Ok we bakers don't have much free time 😅. Anyway.. Love the dough sheeter...
Hi i would like to share how i get the water out from the spiral mixer. Recently i discovered an aquarium pump! It is small and portable. People use it to drain water from fish aquarium when they want to clean it. It works great. But at the end still some small amout of water and then u will still have to use a sponge or microfibre cloth. Hope this will help 👍
Great job, very efficient and keeps the butter from melting.
Cheers! 🙂🙏

Thanks for watching the videos! It's a little hard to find motivation to film and edit these days - I will try to put out more content soon. Thanks again, means a lot! 🙂🙏
I wish you could have a proper bakery soon, that's my dream too. But I could see how exhausting that is when you grow your business. Wish you all the best.
Thank you! I wish I could move the bakery outside the house soon, too! Cheers! :) - JC
Thanks for sharing! Micro baker from Taiwan

Hello! So sorry for the late reply - I have a video coming out soon (kaka-order ko lang ng bagong bakery equipment so it's a good time to make a video out of it). Cheers! 🙂
@@wildbreads2229 sir can you share po how to order dough sheeter in alibaba like yours please😢
Congratulations! Would it be possible to work a few days with you on croissants and sourdough production?
Send me a DM on my account @wildbreadsbaker and let's schedule your visit! Cheers! 🙂🙂
What flour do you use for your croissants? Do you have specific brand? Really interesting work! 🥐
Hi there! I use what's locally available here in Los Banos - San Miguel Mills and the variant I use is KING. It's bread flour, some people call it 'first-class.' I wish we had access to more technical flours tbh but these work din so it's alright! Anyway, thanks for watching! 🙏🙏 - JC
Hello, ask ko lang po sana if san nyo po nabili yung dought sheeter nyo po (for croissants)
Sa alibaba po pala. Hehe. Would love to know how din po. Hehe.
Hi! Yes, sa Alibaba - I really should be making a video about it soon! Haha!
Hello po sir can you share po how to order the dough sheeter pls ty
You are one of my inspirations in bread baking since i started watching you during the start of the pandemic and it's so great to see you grow from then! I am now planning to start a microbakery and i always go back to your videos to give me courage to pursue what im passionate doing. Kudos to your growing business!!
Hey Marinette, you don't know how much your comment means to me - thank YOU and good luck! 🙂🙏
Well done to all of you. I’m thrilled for you.
Means a lot, thank you! 🙂🙏
Hello sir, saang company nyo po inorder yung laminator ninyo sa alibaba? We are planning to buy. Ans what flour are you using para maging ganyan kaganda yung croissants ninyo?
Hi! I bought from 2 companies (R&M and Shineho). Will make a video Alibaba video soon. I'm using locally bought bread flour lang - they refer to it as first class. It's cheaper than APF and I'm used to it from making breads so I chose to work with bread flour. 🙂
Hello Sir in what company nyo po nabili yung dough sheeter please? Sa shineho or R&M po?
