Cognac Sazerac - Better Cocktails at Home

The classic Sazerac cocktail was originally made with cognac and we take a trip back to the mid 1800s here by using brandy. (Fun fact, all cognac is brandy, but not all brandy is cognac.) Using brandy creates a softer drink than when you use a rye whiskey. Cognac Sazerac mid 1800s 2oz cognac or brandy -.25oz simple syrup 2 dashes Peychaud's bitters .25oz absinthe Add the brandy, simple syrup, a...

It was created by Erik Castro in 2015 and is similar, with 1.5 oz Mezcal, 0.75 oz Punt E Mes, 0.5 oz Galliano Ristretto, and one dash Scrappy's Chocolate bitters. This is one of my favorite punches, especially this time of year. I like to add the hot black tea to the oleo saccharum to dissolve the sugar. It looks like you might've reduced the sugar from 3 oz to 2 oz? I've made this exactly as written (1/3 more sugar than lemon juice) and compared it to a batch made with equal amounts of lemon juice and sugar, thinking I'd prefer the equal parts version (since most punches are equal parts). However, I ended up preferring the original recipe.

    • @BetterCocktails
      @BetterCocktails Рік тому

      Interesting to hear you liked the original better. I hate cloying drinks more than tart drinks so I skew that direction.

    • @EricAngle
      @EricAngle Рік тому

      @@BetterCocktails Yeah, I was a little surprised myself since the recipe reads sweet. I seem to recall Wondrich explaining that punch calls for more sugar than a cocktail because punch is more diluted and thus needs the sugar to help it not taste too thin -- and USS Richmond does call for a fair amount of soda water / champagne (equal parts stock and weak). Maybe that has something to do with it? Next time around I may try somewhere in between the original and equal parts. Incidentally, if you like USS Richmond, the Daniel Webster punch is similar and quite tasty.
