As a Viennese, I can confirm that these are common street food dishes. You should really try it. Go to Switzerland, or even to a good cheese retailer in France. Gruyère is much more expensive than Comté. And if a fromagerie sells you Emmental for Gruyère: run away. Gruyère has no holes.
