I love my Hario syphon. It's so easy to customize the brew. It will accomodate any grind. I have the stock alcohol burner and speed things up by preheating the lower chamber in the microwave.
Doesn’t the filter remove the oils? That’s where the flavor comes from.

I can see a Comandante grinder on the table. How many clicks do you recommend for the Syphon?

If you watch the video on their channel, they actually explain and demonstrate how actual 9 bars of pressure is achievable with a firm press. ua-cam.com/video/Q7DRbcIArMg/v-deo.html Also, if it is within the ~1:2 ratio and is sufficiently well extracted, it fits the definition of espresso doesn't it?

Never a good idea to double brew, in my experience. You'll only emphasize the burnt and acidic tastes. Although since a vacuum/siphon doesn't need to completely boil the water, it might not be as catastrophic as usual.

The stock Hario burner is an alcohol burner with a wick and can be very slow. The burner he's using here is a Yama Glass Mini butane burner.
How many clicks on the Comandante C40 did you use for the Syphon? Or did you use an automatic grinder? :)
