    Cooking the beef in bacon fat. I think you're my new favorite person. And I'm assuming the ketchup instead of the quarter cup of sugar which usually goes into beef burgundy. Can't wait to try it tonight.

    All of the people turning their noses up at the ketchup - get a life. Chicken tikka masala was originally made with Heinz tomato soup rather than fresh tomatoes and actually is delicious all the same!

    OK Ketchup...hmmm. I think it's for the sweetness. Traditional Boeuf Bourguignon has caramelized onions as a topping, along with mushrooms and bacon. Those three items add a whole dimension to the dish that really makes it special. Therefore adding Ketchup in this version serves the same purpose as the onions.

    What if all those 'erbs' are not available? Can we add coriander instead?

      Yes, you can use coriander, but the flavour will be different. Most people associate garlic butter with Italian cooking, so italian herbs will give you a similar flavour; coriander will give a more mexican/mid asian flavour. It's also quite a strong flavoured herb, so go in with a light touch - you can always add more later. You can use dried herbs if you can't get fresh...just remember to use less.
