Use up those courgettes/zucchini with this delicious Courgette Parmigiana Recipe

In this video I make a courgette parmigiana recipe from the courgettes/zucchini I grow in my no-dig garden. As I grow my own vegetables I am always looking for interesting and exciting ways to use up my courgettes and this recipe ticks all the boxes.
The ingredients for this recipe are:
1 medium onion (cubed)
1/4 tsp chilli flakes
3-4 garlic cloves (roughly chopped)
700g courgettes, thickly sliced into 1cm slices
75g parmesan, grated
250g mozzarella, sliced
1/2 tbsp caster sugar
1 tbsp red wine vinegar
700ml passata
20g fresh basil leaves
Splash or 2 of water
1 tsp olive oil
Enough olive oil to cover the surface of a frying pan
Salt to taste
