I would simply use the +3 siege general, and simply siege race there forts with no battles. you should comfortable take there capital, and the fort next to it, long before they can siege your capital province, when they do not get a +3-6 siege general over there vassal swarm. And for merc stack, aim a +3-6 siege merc stack.

If you want to get the achievement, you basically have to play until 1600s, you have to route trade thru east asia then central asia with trade companies

You do not need to get to cap on westernization points to take them you only need 30, and to get a quick start i recommend using them asap.
