Yields 4 biscuits:
1.5 cup of flour (180g)
1 tsp of baking powder (5g)
1 Tbsp of white sugar (13g)
Pinch of salt (forgot to put it in the video but you should put some!)
1/3 cup of cold unsalted butter (5 Tbsp, 72g)
1 egg yolk
1/2 cup of cold heavy cream (120g)

    This is an update. You really helped with my questions before. So now I'm resting 30min, baking 325f 18mins and no sticky bottoms but now they are hollow inside and when I try and eat one it all shatters into lots of crumbs, very crispy and light with hollow. Not sure now where I'm going wrong? How can I get a dense full shell? 🙂

    Tried this today and i love that it wasn't too sweet and that the earl grey flavour was not too subtle or overwhelming! I'll suggest to add a pinch of sea salt if you're making this recipe!

    I tried the macaron mat you recommended but my macarons still appear uncooked even though I've tried cooking at gas mark 2 for 20mins then they still wasn't cooked so I turned it up to gas mark 3 for 5 mins but then they went brown and were still wet and sticky inside. You could see the edges starting to shine and the feet but nothing inside. I'm really lost. I tried your recipe too. Surely I wouldn't cook them longer? The feet rise but not insides.

    Why do my macarons stick to the parchment paper and they are almost burning

      are you using convection or conventional oven? If your macarons are stickinh to parchment paper they are not cooked enough. If they are almost burning, the top temperature is too high. Try putting them on a lower rack :)

      it depends on how big your shells are. I made 14-15 macarons (28-30 shells)
