Kiritsuke's always have a single bevel. What you are holding is a K-tip Gyuto not a Kiritsuke. IE a Gyuto with a Kiritsuke shaped tip. A bunka is a K-tip Santoku for example. This is my understanding at least. Beautiful knife either way.

My two favorite knives are the Chinese Vegetable Cleaver and Nakiri. All of your knives are great looking. I eat a plant-blased whole food diet. So these would be perfect for me. Also they all look great.

are the single bevels really flat? or did you grind a slightly hollow 'uraoshi'? All knives are beautiful nonetheless!
Yes, they are mostly flat. They have roughly a 120" radius uraoshi from the 1 degree platen that I used to grind it on

Hey there. Great questions! The pattern is forged and inside the steel. The acid etch deepens the pattern and brings out the details.

I'm so glad you like the mirror polish better; however, revealing the distinct patterning in the Damascus stainless steel is what we were aiming for here. Even when simply mirror polished, the pattern still exists. The acid etching brings out and adds definition to the blade and the pattern. This is stainless steel powdered Damascus called Damasteel and it is made in Sweden.
Thanks for sharing your insights into handle design. There has been plenty of innovation in knife steels through out the last 3500 years with only small changes in handle design. The efforts to innovate handle designs, even with modern technologies is costly both in terms of time/money. This is likely the main reason we have seen few changes over thousands of years. There is far more to be gained in terms of user comfort, safety & ergonomics with innovative knife handles than blade designs. Equipment to test the ergonomics of handle designs is currently under development with some preliminary testing completed. Preliminary data indicates traditional handle designs & the old blade centric pinch grip leave a lot to be desired both in terms of comfort & safety. As Gordon Ramsey said " The Secret to a great set of knives is in the handle "
