Recipes | EASY Tomato & Egg Stir-Fry 番茄炒蛋
【Ingredients】
2 large tomatoes (thinner skin breeds, they usually won’t look as red as Roma tomatoes or plum tomatoes)
3-4 large eggs
1 tbsp ketchup
60 ml hot water
1/2 tsp salt
1/2 tsp sugar
Slurry water (1:3 starch to water ratio)
【Steps】
1. Chop tomatoes into wedges
2. Chop scallions finely into pieces. Separate whites from the greens and set aside.
3. Crack 4 eggs into a bowl and beat well.
4. In a well preheated wok, add 1 tbsp cooking oil and fry the eggs until lightly cooked. Transfer the eggs into a plate and set aside.
5. Top up the oil in the wok to 1 tbsp amount and fragrant the scallion whites.
6. Add in tomato wedges and cook over medium high heat until cooked. Add in 1 tbsp ketchup and 60 ml hot water. Bring everything to a boil, and continue cook until tomatoes softened and mushy (not by smashing but because of long time contacting with oil and heat).
7. Add salt and sugar to taste. Then, add the scrambled eggs back to the wok. Mix the eggs well with the tomatoes.
8. Add slurry water to thicken the dish to your desired texture - I added 2 tbsp. Garnish with chopped scallions and plate.

original taste coke for this recipe because this is essentially a red-braised dish and we’ll need the sugar in coke for this cooking technique; diet or zero sugar coke will not give the same effect.

@@PepsoPteltd A medium size chicken thigh with skin has about 9.5-10 grams of fat (meat plus skin). A medium sized skinless chicken thigh has about 5-6 grams of fat. You can keep the skin and exercise a bit more. Plus, the skin adds some good flavor. And you can always make the recipe skinless thighs

Hi, I bought it from a Japanese brand in my local department store, costed me around US$140 (≈8000 php) for a 30cm wok (lid included). If you're looking for a wok, I would say any wok that you feel comfortable lifting single handedly and provide good heat transmission is a nice wok :) Plus it takes some time and effort to season an Asian handcrafted wok properly, so non-stick woks manufactured by European brands are also good alternatives, help you control the oil usage as well.

What soup base did u use?
I use Japanese white dashi (白だし, shiro dashi), they're good for almost all sort of Japanese dishes that requires dashi broth. Store-bought concentrate work just fine!
