Smoked Bologna on a Pellet Grill | Recteq Backyard Beast
Looking for an easy and delicious smoked bologna recipe? This smoked bologna sandwich is a game-changer! Using the Backyard Beast from recteq, we’ve transformed a classic bologna chub into a smoky, flavorful masterpiece. Ingredients:
• 1 whole bologna chub
• Yellow mustard
• Your favorite BBQ dry rub
• Pub cheese
• Coleslaw
• Soft rolls
Instructions:
1️⃣ Remove the casing from the bologna chub.
2️⃣ Score the bologna in a 1-inch cube pattern for maximum flavor absorption.

    Just my observation… he says apply rub liberally but he doesn’t put rub on one of the sides. Says he’s smoking at 275F but the dome says 250F. After he puts the ribs on, dome temp is damn near 500F and you can see some of the embers coming up when he opens the egg to check on the ribs. After 5 hours you can clearly see the Egg is around 400F. Once it’s finished that’s not bark that’s char lol. After he slices the ribs you can see the fat is hardly rendered. Don’t listen to this guy he has no idea what he’s doing. I’m not trying to talk shit I’m just pointing out the obvious.

    With just one burner and 2 zones, how do you do zone heating? It seems the entire griddle will be the same temperature, which is not what you want!

      It looks like you can shut off one of the two burners there for having a hot and cool zone.

    The side burner grill should be in the upper position to sear so to stop flare ups and avoiud burnning the steak.

      Ihave the same grill. It doesn't matter if you have the grate on the low or high position. It only changes it fot about 3/4 of an inche, so you're gonna have flare ups no matter what.

      @@MrAbletospeak the problem is that on that particular grill, the infrared burner is VERY close to the protein, no matter how you adjust the grate. You really have to pay attention because the difference between a tasty steak and one that is burnt is a question of seconds. I only use mine with meat that I have completly trimmed of any fat.
