I get asked all the time how do you do that?What is your process?How do you have time?Where do you store all that?What's you recipe?Where did you buy that?How much was that trip?How did you make that quilt?So after lots of encouragement and a really supportive team I am here to show you "The Ellis Way".I have had to teach myself to do things through the years and have learned from others what to do and what not to do!My husband loves to grow a garden way bigger than we need so I have to be creative in storing, canning, and preparing meals.He also likes to hunt and we process our own meat.Also at the request of my daughters I will be writing my recipes and sharing.Travel is my favorite thing from Mission Trips, Fishing Trips to Alaska, Cruises, Beach Vacays, Florida trips to see the fam, Big City Trips, and many others.History is my passion and quilting is my hobby.Working full time and raising three daughters I had to learn to create shortcuts, get organized, multitask, and live life!
Ellis Way- Easy Peasy Blackberry Jam
ELLIS WAY- EASY PEASY BLACKBERRY JAM
INGREDIENTS
Blackberries
Water
Pectin
Lemon Juice
Granulated Sugar
Ratio
1 Cup prepared fruit including the water it was cooked in
1 Cup sugar
1 Tsp lemon juice
1 Tbsp Pectin
DIRECTIONS
1. Soak then wash berries in water
2. Add clean berries to pot and cover berries with water just until covered.
3. Bring to a boil then reduce heat and simmer for 2o minutes.
4. Using a mesh strainer pour berries and water through strainer into clean pot.
5. Mash berries through strainer.
6. Add all ingredients but do not add pectin yet.
7. Bring to a rolling boil then add pectin.
8. Reduce heat stirring constantly and simmer 40 minutes.
At this point liquid should start to stick to the side of the pot and is ready for jars!
Use proper canning methods!

We love love Buc-ee's! We stop every time we see one! We always love trying new stuff every time we go. Try the 3 meat sandwich...Its awesome! We love pickled stuff so we had to try Buc-ee's. When we stopped on the way home I saw people coming in just to buy the Quail Eggs.

The garden is doing great. We have had plenty of rain. It's not just about getting everything planted. We space out planting depending on what we want to harvest together. Also some plants do better in the early summer and some do better in the hottest part of summer. That way everything is not coming in all at the same time so we can try and keep up with prepping, canning, and storing.

Its not a safe procedure to pressure can summer squash or zucchini (you can zucchini with tomatoes) but it turning to mush and compacting is why its not safe
I have been canning squash and zucchini for years. People have been canning it for over 100 yrs. I can with tomatoes at times too. I cold pack which helps keep it from compacting and it is all still the same as the day it was canned. Its the same constancy as boiling and freezing. A lot of people do not have freezer space so I was showing an alternative. My preferred method is freezing! Due to the lack of acidity, If you are canning it is best to pressure can.

Quail eggs taste no different from chicken eggs. I grew up eating them, duck, etc.
Yeeee I think the yolk to white ratio in different eggs is maybe what throws people off

I find them at TSC, Walmart, Hobby Lobby, Flea Markets, etc. I have all different kinds. Target has had some before too.

Thank you for the information. Where did you say you got your batting? That's a great cutting table, love all the storage. You could also put command hooks on the ends for any larger rulers or even a peg board to hold various tools. Love your ironing board!
