Ringless honey mushrooms, scientific name: Desarmillaria tabescens
Ringless honey mushrooms are everywhere in their season and should definitely be taken advantage of because of their abundance when they appear. Because they are saprotrophic you can find them in wooded areas, decomposing stumps, dead and dying trees and sometimes at the base of living trees. They are a good source of B vitamins, supporting energy production, cognitive function and metabolism. They contain vitamin D, antioxidant properties and antihyperglycemic effects because they were found to lower high blood sugar. They boost your immune system and have a slew of other health benefits, plus they're a good edible. They should be cooked well, I boil them in hot water for about five minutes, then sauté them before storing them in the freezer. Happy foraging! @Jwilkerson294
