    I feel so sorry, having served wine in various restaurants and having watched documentaries on the high level Champagne industry. It gave me the impression that at least in the customer top segment, after all this study and effort, you'll be simply jumping through hoops in front of people who'll never grasp the quality of the wine you're recommending them, or sometimes not even caring about your expertise nor the wine at all : they'll simply buy a 1000-10.000 euro bottle because it is expensive and they want to feel elite...

    Just tried a Krone Vintage Rose Cuvée Brut and don’t like it. It has some molasses and caramel fruit flavors. Is it bad or is it just that I’m not used to something that is from 2018 and drinking it in July of 2024? I would love to know.

    She performed very well, fast and accurately. It is required in a competition. But in real service, in my opinion, making guests happy, comfortable and relaxed is preferred. Moreover, making the dry martini is so quick, so why did she make the martini first and leave it there to wait for the wine being served? The last point here is the quantity of dry vermouth, was it overpoured? 😅

      That's what very dry means. More dry the martini you want, the less dry vermouth is used. The most dry is to just slash the glass with the vermouth and toss it away. You still get the aromas from it.

      She used the vermouth to coat the stirring glass. A classic martini is very dry about 4 drops only. Hard to get right when free pouring.. Her technique was very clever and effective. A classic pink gin is made in a similar way, Angostura used to coat the glass before being discarded.

      to be honest, I would of offered the host a taste of it before going forward, but you could absolutely be right on the fact that this was a special request of the lady. if I felt any confusion in a restaurant or business setting, I would simply ask who would prefer to taste.@Spencer Raz

      He treated him as the host of the table, who is always served last, after his guests. And a sommelier is expected to have at least a basic knowledge of most beverages, such as cocktails, spirits, but also tea and coffee etc.
