The meatball dinner looks so amazing! I leaned into my Appalachian self this week. We had: Frito pies (chili with Fritos), Beef & black bean soft tacos, Soup beans/corn bread, Meatloaf/mashed potatoes/green beans, and a new sloppy Joe cornbread bake that was a hit! For my birthday last week, I splurged and got the jarred Carbone spicy vodka pasta sauce and prepared by directions with some baked chicken and salad. Highly recommend!

Nothing brilliant but I made chili this week...mostly as a "use up odds and ends in the fridge" exercise but also so cozy and comforting.

They all looked great got me in the mood for chocolate chip with pecans, lots of chips and pecans just a little dough to hold them together :) I used to make them for my son who is now 55. Loved your finished product, & especially the chopstick-sectioning. I have been eating poorly for too long that it affected me so bad I was in hospital for months, so now I started eating better, and some dinner I had this week were pulled pork with honey BBQ sauce with turnip, baked sweet potato cheese and chilli and coleslaw, and scrambled egg I tried following Gordon Ramsay's recipe with sour cream and its nice !

Happy New Year!!! I had Cashew chicken w/rice, Peppered steak with lots of onions and peppers, A great ham sandwich and a luscious meatball , peppers and onion sandwich. Lots of good food. I doctored up some alfredo sauce by adding it to sauteed onions and garlic, combining, and cooking it down a little, then poured it over some shells and and chicken, topped with breadcrumbs and parmesan, and baked it in the oven. It came out so yummy and hearty. Also made chicken noodle soup this week but I used vermicelli that I broke up into small pieces. Love!

We always did pigs in a blanket growing up since it was simple and lunch was the main festivity, but I ruined that by going vegetarian, so maybe I should make this without the ham for everyone!
