Rice Kubba In Tray (Kubbat Halab) in The Oven
Ingredients for the Filling:-
1 lb ground meat
1 medium onion chopped very small about 3/4 cup
1 tsp salt
1/2-1 tsp black pepper
2-3 tsp 7 spices (Baharat)
1/4 cup fried slivered almonds (optional)
1/4 cup fried golden raisin (optional)
-Cook the meat until browned. Drain any excess oil.
-Add vegetables oil about 2-3 Tbsp and cook for a few minutes.
-Add the chopped onion and cook for a few minutes until the onion is tender.
-Add the spices, salt and black pepper and mix until fragrant.
-Add slivered almond and raisin (if you are using them 1/4 cup of each) and mix.
-Remove from heat and let cool down and set aside until needed.
Ingredients for the Rice Dough:-
2 cup white rice ( not Basmati rice) washed and soaked for 10 minutes
4 cup water
1/2 tsp salt
1/2 tsp turmeric powder
-In a medium pot over high heat, mix water, salt and turmeric and bring to boil.
-Add drained rice and let come to boil again then lower the heat to low and cook for 20 minutes or until the rice is cooked and soft. The rice should be very soft and kind of mushy. should be mushier than a regular rice that we eat.
-After the rice is cooked turn off the heat.
-while the rice is slightly hot, either you use a masher to mash the rice or a food processor or you can knead it like you are kneading any dough until the rice becomes like dough consistency but not that smooth.
-Divide into two portions.
Prepare the dish:-
-Generously grease a baking pan (9X9) with oil.
-Spread the first portion of the rice dough in the baking pan and press well then add the filling then spread the second portion of the dough and even it out very well and press with help of some oil.
-Bake at 400 F for about 30-45 minutes or until the top becomes light brown and crispy.
-Cut into squares and serve with simple salad.

As I work in a Masgouf restaurant, the method is similar, but we use carp fish, and the method of opening the fish, I think, is different from your method, and the sauce over the fish is different. But the way you made the food is the original home way
