Is this bad for smell? I live in an apartment where my kitchen and living room are the same room.
It smells like beef. Keep the extraction fan on while it is rendering, then the smell won't linger.
I agree, the smell wasn't actually bad at all! It just smelled like something delicious was cooking. I haven't tried this with pork fat, I have heard that is more pungent.
Try using a Crockpot on low. It will keep the heat low enough to render but not brown. The browning can change the end flavor, it doesn’t mean it’s bad but it won’t be as pure as tallow that hasn’t been taken to the point of browning. If you desire browning the bits after render, strain off the tallow and continue cooking until the bits are brown. I do this very thing by buying 20lbs of beef suet from the butcher and rendering 4-5qts tallow.
Oh wow, that is next level, great tips! We thought about trying it in an Instapot, any experience with that?
@ I’ve never tried with an instapot but as long as it can go on low I’m sure it would work. Also, if you start the process with a couple cups of cold water in bottom of the pot it helps to prevent any browning. By the time your tallow renders the water will have evaporated away. I like using the Crockpot method because you don’t have to babysit the pot, just add the fat into the cold water, turn it on low and go about your day. Start checking it around 3-4hrs later and go from there.
I do this for every brisket, awesome for cooking

I use lard for all my cooking but I’d love to get my hands on some of that 😊
It's worth a try, super easy! Even if you don't have a piece of fatty meat to trim, you can check with a local butcher and see what kind of fat or suet they have available. In my neck of the woods, beef tallow is at least $11/pint, so you can save some money with some time and patience.
@ Thank you for the tip. I do buy a lot of brisket for the doggo but I love the fat so much that I eat it all! I’ll see what I can get at the butcher.

@ As a fellow lover of tuna fish salad, I had to try it at least once. I think I would skip the apples and vinegar next time, and probably only add peas and corn if I had them handy… the wasabi was a nice touch though!

@@Rod-iw9st Of course! Some teams have designated dog eaters! I think the 2023 winner consumed 33 dogs and I think 2024 had a two way tie at 25. I feel like that's achievable. Lenny says he could eat 100 without breaking a sweat
