Thanks... you're like one of the only ones who actually cooks. I've searched and searched.
Do you get air flow underneath the fire with those bricks? I use a wire rack with a expanded metal basket on top of it. You get air flow underneath keeping things going and the basket really helps keep things together and burning nice and clean. The fires burn very clean this way rarely any white smoke coming from the stack.
I have done a lot of cooks on this smoker. The key to fire management in this unit is using a expanded metal basket in the fire box. I use a combination of charcoal to get things going and small wood splits. I chop them down on my miter saw. Depending on conditions and the quality of your wood a small battery operated fan near the firebox may keep things burning consistently too.

I am actually picking up my Old Country Wrangler smoker this Thursday. I can’t wait. Thanks for the tip on seasoning. I am going to try this method too! Makes sense to me.
If I did my over again the only thing I’d change is, never cover it if it’s wet at all. I have a little rust on the outside hinge bolts and the outside of the fire box. Have fun!

Actually. Both cases. Obviously letting it cool down after a cook. But I now also wipe the outside down completely before putting the cover on it.
@@crosswirebar-b-que7214 that’s a good call. What do you wipe it down with? Lent free cloth?
@ricky.7886 I actually just use a towel. My thinking is if I cover the smoker with any moisture it’s more likely to cause rust.

I’ve had mine since November 2020 I keep it covered when I’m not cooking. I’ve gone through 2 covers and painted the wood smoker box once. Zero rust inside or out. I like mine a lot
My opinion is if you like the flavor of the wood it's not wrong. I'm sure there is a learning curve for your new pit but it looks like it turned out pretty good.

I think so. The Fire bricks retain heat and allow me to burn less wood. I did make one mistake on this part. I wish I hadn’t used the top great down inside the firebox. It’s more helpful to have it as a Seering Grate than a burning area.
Consider adding other meats with it,have a lot of foil to wrap it up good...and you'll eat BBQ for a week! I myself with brisket don't like to drown it into sauce once its done .....but,that will make good pulled beef. For a change gently smoke Ahi tuna on that pit.Believe it or not season ONLY with a lil black pepper and Himalayan pink salt!

That was the deciding factor when i chose the wrangler.
Always flip and rotate the brisket at least one time during the cook. Since the temperature in the cooker is uneven it will create better bark on the meat.

This pit loves 300 degrees. I can’t get mine to cook lower no matter how much or little wood I use. Kinda frustrating.
I’m sure you’re already doing this, that tub vent in combination with the vents on the firebox may be able to help. I also lined my firebox with fire bricks. I can put just a few coals in there and maintain a pretty low temperature (225 to 275)

I generally will tie a couple of pieces of cotton twine around it horizontally before cooking to help hold it together, as the roast tends to want to fall apart at the fat seams. Seems to keep it more moist as well.

I like your gumption! You remind me of Cowboy Kent Rawlings. I stumbled upon your channel via an algorithm I’m sure. But I liked what I saw and enjoyed your humor and carefree attitude. Had to subscribe. I’m shocked more people haven’t. They just haven’t found you yet! Anyway, I’m in the market for my first offset and figured I’d get some pointers from as many people as I can. And learn from their mistakes or successes so I can figure out what to expect. Looking for a heavy duty smoker like the one you got or 1/4” thick. Love your channel and I need to slow down watching your videos because I’m burning through all your content.

Crates? Or Grates?
That won’t be a problem. You can season the grates separately to keep them from rusting and make them easier to clean between cooks.
I see a lot of videos but when I see dogs inside a kitchen 🤢🤮I love dogs I’ve had many dogs but pets don’t belong inside a house

Don't know if it's necessary but I score both sides pretty deep and add soy sauce in the cuts till it soaks in
