Your " cream icing " is the same recipe , I use for my puff pastry filling . It's so delicious !!! We always double the recipe and freeze half in a tube shape . Then we make whoopie pies the next week . 😉

Yummy! Seems to be my cream puffs recipe. I prefer the individual cream puffs. You can fill the "cake" with many things, pudding, chicken salad, crab or shrimp salad. Delish.

This looks so delicious! I am diabetic and I would really be interested in converting some of the ingredients of this recipe into ones I can use. Like, can I use almond flour instead of the regular flour? Can I use sugar free Swerve in place of granulated sugar? Also for the holidays can I add dried fruit or sugar free chocolate chips?
If you use almond flour add cornstarch to it for the choux batter id say remove 1 tbsp of your flour per cup and replace that with cornstarch. The sugar substitute should be fine
I would avoid adding fruits or chocolate chips to the choux pastry it could hinder it from rising in the oven . Better off mixing it into the custard towards the end after mixing with the butter

It's basically a cream puff in layer cake form. The cream is very standard pastry cream, the cake layers are pâte à choux

The reason for the cornstarch is it will help the almond flour make a crisp shell and help it from collapsing.
