    At Acre Forge, we’re committed to continuously improving our products to meet the needs of passionate cooks and professional chefs alike. Our Macrum Chef Knife has always been a standout, but with the introduction of the MK2 model, we’ve changed a few things based on consumer responses. Here’s a detailed look at the key differences between the MK1 and MK2 Macrum Chef Knives.
    Different Blade Steel
    One of the most significant changes in the MK2 model is the blade steel. The MK1 features AEB-L steel, known for its excellent toughness and ease of sharpening. AEB-L is a reliable choice, offering a balance of sharpness and durability.
    However, the MK2 takes performance up a notch with RWL34 steel. Developed by Damasteel lab in Sweden, RWL34 uses advanced powdered metallurgy technology, allowing more alloying elements to be packed into the steel during the melt process. This results in a blade that cuts longer and is more stain-resistant compared to AEB-L. While RWL34 holds an edge exceptionally well, AEB-L remains slightly easier to sharpen and is more resistant to chipping and minor abuse. Your choice between the two may depend on whether you prioritize cutting longevity and stain resistance or toughness and ease of maintenance.
    Refined Geometry
    The MK2 model also introduces a change in blade geometry. The MK2 has a touch more thickness at the spine compared to the MK1, while still maintaining the same laser-thin edge. This additional spine thickness allows for greater convexity in the blade grind, achieved through hand grinding on a soft back platen. This convexity helps with food release, making it easier to slice through ingredients like potatoes without them sticking to the blade. The added rigidity at the spine also aids in cutting through denser vegetables and provides a bit more weight to assist you through cuts.
    Premium Handle Options
    In addition to these technical upgrades, we’re currently in the process of milling MK2 scales in the CNC machine for the production run. In the meantime, we’re also crafting some premium models with unique burl wood scales and multi-part bolstered handles. These premium options not only enhance the aesthetic appeal of the knife but also offer superior comfort and grip.
