    In today’s bonus video, my friend and assistant Kelly Haines Collins is joining us to teach us how to make a layer cake. Kelly is a trained pastry chef and has much more experience than me in building layer cakes.

    I’ve always wanted to learn how to decorate cakes. We had culinary arts when I was in high school but never covered decorating. I always get super discouraged bc I hate how my cakes come out. Definitely going to attempt again after watching this video.

    If you don't want to use regular food coloring, the strained juice from blackberries will give a similar purple color to the frosting in the video. For the buttercream, margarine can be used if there's no butter available.

    If you mix/stir the frosting/icing a little before u use it, it lessens the wholes on the icing on the cake.

      Glad you found the tutorial helpful. I do all of my own video editing and I don’t claim to be good at it. It is honestly incredibly difficult for me. Someday I will be able to hire someone that is better at picking out music and editing, but for now, it is what it is.

    I found that warming the scraper in hot water and dry it off then smooth the cake for a perfectly iced cake and smoothing with a paper towel works good too

      Good tip! You can also warm it with a small blow torch.

    I personally thing that cooling-chilling the cake is better for a crumb coat, but I will try out the method for a crumb coat and compare, thanks this was really helpful!

    This is the third tutorial I started to watch this morning. I noticed that the technique in this video frosting tutorial is great. Yesterday, I frosted my grandaughter's birthday cake it turned so bad. Some part of the side of the cake the frosting is moving away from the cake because it does'nt stick. Good I found your video and I'll try your technique how to frost a cake. Mam, what's the reason why some of my frosting does'nt stick in my cake? Please help me.       You'll need about 3-6 cups for a 3 layer cake depending on your recipe and how much you use.

    @4:42 you say to hold the scraper at "about a 45° angle." If its straight up and down, that is a 90° angle. Are you talking about the orientation of the scraper to the flat surface beneath the cake or hold it at a 45 against the side of the cake as you turn it?

    well if you wet a paper towel and fold it and then put it in a folded foil then wrap it around your Kate Tim you will find your cake won't burn around the outside and instead stay fluffy and white

    Question? Why do you level off the cake layers? Could you not have done the parchment with a dot of frosting to hold in place, then frost the layer? What pans did you use and what cake mix? Seems to me you could have used the third layer flipped from the pan with the bottom side up. It looks beautiful with the star flowers on the top! When you scrape the sides too close you should put a marzipan or fabric ribbon around the "seam". Looks good! Dig in?!

      By leveling the cakes you create a flat surface when stacking. If you didn't you would have a dome shape in the middle of your cake.
      Yes, you can use a dot of frosting to keep it on the parchment. The recipe for the cake and full tutorial is linked in the description box.

      Hi there! As mentioned in the video, this is american buttercream which does tend to crust over as it is exposed to air. For a smoother frosting you can use a swiss meringue or italian meringue buttercream which is linked below. However, since this is for beginners I wanted to use the easiest frosting there is to make (american buttercream) to show it can be done with it.

    I’m making a unicorn cake for my daughters 4th birthday. It’s going to be a vanilla cake with 3 layers, in between the layers blueberry filling and for the outside icing strawberry cream cheese icing. Hope it comes out good!

    I’m trying to do a home made cake for my sons birthday.. I found a recipe I wanted to use for the icing that has cream cheese in it bc buttercream is usually too sweet for us… do you think it will be hard to frost with?

      Hi, you would not want to use royal icing for cake. Royal icing is used for decorating cookies because it gets very hard. You want something softer like buttercream to go with your cake.
