I knew all of these tricks but one problem I face against opponents who keep passing between the midfielders and wingers is that after a few passes, my defence regroup in 2 different directions which leaves the centre open and then they get enough space to shoot even if they cannot go past the defence.

Everything you said, I do. You just forgot to speak about yhe 2nd Defender button which I think is slept on. You can control one player to mark any of you opponents players that are open for passes whilst the 2nd defender marks the play with the ball. (Not to toot my own horn but I do consider my defending to be one of the best in the game) also make sure your defenders are 190cm to help with stopping crosses and that they have good speed.

Note : I wouldn't suggest using 5 - 3 -2 or a formation with wing backs.
first off wingbacks aren't really defenders they are like left mid who attack and defend at the same time and there aren't really good wingbacks in the game.
Instead using a formation with 4 defenders (lb,cb,cb,rb) is better since the lb isn't going to change his postion unless they have high attacking workrate.

The only way to only defend without the AI making your players act like clowns is to turn off auto cursor switch which is also bugged because making headed passes would keep switching your players which is kinda stupid
