i wish it was possible to just skip the sounding rocket stage in RP-1 and already start in 1957 or something like that, very boring first couple of hours, there's a reason why people do caveman rockets all the time

Some good news for you. A few months ago a 1957 Career start scenario has been included with RP-1, so you can skip that all and begin with early satellites.
