That looks so good. we use to cook a whole hog at our deer camp before we lost the lease, on new years eve for new years day the last day of deer hunting season. the skin would come out a beautiful mahogany color. we cooked it in a huge smoker it would take about 12 hours to slow cook but juicy tender succulent and the crispy skin was ways the first to go. This reminds me of those days. It been about 15 years ago as some people have died and moved across the country. But I never forget those days family, friends, camaraderie and good food always a winning combination any time of the year. I know that pig was so tasty you made almost could taste it from here in GA.

We were all either in college or just out and we didn't know what the hell we were doing but we had plenty of enthusiasm. My friend's father suggested stuffing it with red beans and rice (he was from Louisiana). That turned out to be not such a great idea. About halfway through the cook, the belly started to split open and all that lovely mixture fell into the fire. But the pig was good!!! I'd love to try something like that again but I've got two problems - 1. Carving out enough time is just not in the cards for me right now (too many projects that never seem to get done) and 2. I don't have a big ass grill like that.😁
LOL I made a video cooking the hog stuffed with rice and beans too! It is difficult but it is delicious! 😀 I got that grill in walmart about 2 years ago and I love it and about time I'm sure if you plan it well you can find the time but be on top of it. I've been roasting pigs in the spit since I was a kid and if you dont pay full attention it can go bad real quick! 😀 Thanks for the support!

It's a bit of work because you have to be very careful not to cut the skin but it is so worthy! 😀😀
Just curious... why did you wait until the pig was cooked.....to put on gloves and carve? I'd think raw meat would need them even more.
