I saw on a cooking show recently where the host was in the u.k. somewhere, either england or ireland. They were eating fudge and talking about how the fudge that they have over there isnt what americans usually think of when we think fudge. We usually always have very dark brown, extremely chocolate-y fudge. But this fudge they were eating had no chocolate at all, it was just a sugary buttery type fudge, and the host had said that this, I guess you could call it a white fudge, was more the norm in the u.k. and what people think of when they think fudge. I only bring this up because i noticed there was no plain old chocolate fudge recipe. Even the chocolate and walnut fudge that was there looked very light in color in the image. Like for example we have an old better homes cookbook from the 80s that I use that was my moms and the fudge recipes are all chocolate, theres 4 or 5 different recipes and they're all extremely chocolate-y fudges. Maybe it's just coincidence, but it seems perhaps uk and America think of different flavors when thinking of fudge. Maybe not though, perhaps this food show was totally wrong.

I think you could be right. What we call fudge is something a bit different over in the USA.
