Good morning uncle Geoff and good to see yourself this morning , Sir Barney is resting and thankfully we got through another week . He's listening to Uncle Geoff as I type .... Uncle Percival gout has done little to stop his appetite for the goodies . These macaroons look wonderful and easy to do ...would be lovely with a pot of tea ...we got a new glass pot last night that will give us the option of using fresh herbs and loose tea . Got in woodies if you interested . How will you enjoy your weekend ..your loyal lieutenants

They look so yummy! I will be making this today. I have all the ingredients at home, except for the cherries, so I will use a homemade strawbery jam that I made in the spring (a few months ago here in Argentina) instead. I'm sure they will end up fantastic!
PS , I always thought you were a John Virgo look alike Uncle Geoff . I can finally say this now since I just saw the macaroons resting in a triangle shape . Just like the snooker triangle filled with snooker balls on the snooker table 😅

Hi Geoff, you’ve been snooping in my pantry again!……😂……only 2 days ago I bought a HUGE bag of desiccated coconut for my store cupboard! ……these cookies look delicious…..we love ground almonds and coconut 🥥…..I’m making these tomorrow - definitely 😊……I made a Pineapple Upside Down Cake earlier in the week, this used up the last of my glacé cherries 😢 that I had…..do you think, if I dried (maybe with kitchen paper) each piece as much as I possibly could I’d get away with putting a small piece of pineapple on each cookie instead? It’s tinned the chunks I’ve got…It goes so well with coconut doesn’t it and because the cookies aren’t in the oven too too long hopefully there shouldn’t be too much burning risk to the pineapple, I’m only thinking of drying them in case they make the centre of the cookie soggy - thanks for another great recipe Geoff. Hi Jan. I never snoop, I just raid LOL. I think pineapple could work quite well, if thoroughly drained and squeezed a little to remove excess juice. Of course you can put other things on too, such as whole almonds. Soft dried apricots go very well with almonds so they are an option too.

Hi Olga. Oh yes you can change the cherry for other dried fruits, or a whole almond or something similar.
