I can tell tell the difference, but I don’t know why. I think I work it out based on the most logical way to make something. Foe example increasing and decreasing peyote stitch is too convoluted for most projects, and brick stitch usually won’t be super long.
Is there any difference in stiffness? I'm working a brickstitch bead purse pattern now, but using peyote stitch. I'm happy with the look/feel, but wonder whether it might make a difference in other projects. Good information about thread showing along the edges.
I think brick is much stiffer because the threading is going under the previous thread bridges for each stitch/ bead. Peyote threads through the beads.

For me personally the stiffness of my project is usually the first key. My peyote tends to be soft and flexible
