My mother used to make something very similar but she'd also crack an egg over other things like pisto or garbanzos con espinaca! It was always delicious! Love the Andalusian 'ta luego at the end. 😊 ❤

I thought it would contain potato, but love that it contained that olive oil toast bread. This looks so delicious and hardy. Can imagine spooning it on top of some saffron rice!
I made this last weekend and it was absolutely delicious! The only modifications I made were because of what I had on hand at the time, like red bell peppers instead of green, tomato soup instead of grated tomato, and an artesian Italian bread instead of baguette. Otherwise, the food turned out great! Thanks for the wonderful recipe and keep up the good work!
One of the things I really like about this recipe is the grated tomato. It's winter here, so I'm not getting tons from my garden. I am using what I froze last growing season. Frozen tomatoes work awesome in something like this. I'll be trying this over the weekend.

Well, I am finally getting it! Being vegan (and still loving the taste of eggs) I am simply adding scrambled egg substitutes to these wonderful recipes! Even my abuelita would have been OK with this as she would say to me, "Mija, did you make this yourself? Then it is autentico!" 😌❣
Many years ago, I had a Gibraltarian neighbour who showed me a very basic version of this recipe, which I still use from time to time. As the olive oil is heating up, add some garlic slices to flavour it, then take them out before they burn and then fry the cubed bread. Once the bread is nicely browned, crack the eggs into the pan and stir around to mix the bread and egg. That's all!
This one is definitely on my to-do list, looks great! Would it stay more crunchy if I use stale bread? Unfortunately, that is what I usually have on hand... 😁
never seen shakshuka made with bread like this before but then there are so many versions, and I invent another (probably never to be repeated) several times a year
