1 cup / 250g Mashed potato
1 cup / 250g Grated, raw potato
1 cup / 120g Flour
1 tsp Baking soda
1 cup / 240ml Buttermilk
Green onion (optional)
Salt and ground black pepper
Butter, for frying
Serve: Sour cream (optional)

Where did you net that grater from?
Boxty is so wonderful yes my Nana would make it with scallions also, she’s from co. Mayo. If you make the batter just a wee bit thinner, you can make them bigger and wrap different foods in it, just softly folding it. I also make boxty the way you made and I put bacon and egg on top with hollandaise sauce boxty is perfect for that.
If you don’t want to use bacon, you can use Solomon and an egg with hollandaise sauce.
