Thank You Lovina, For 45 years, every fall I drove 500 miles to my family's Deer Hunt Cabin past Marquette in Michigan's U.P. I love pie crust so I'd always stop and get a hot pasty just on the North side of the Mackinac Bridge. I'd put it on the dash of my truck and drive West a for another hour turning at 117 North to M-28 West maybe 1/2 mile West to "The Old Flowing Well" rest area. There I'd stop and eat my pasty. Then I'd walk to the East edge of the rest area to Pete;s Creek where there was a very mature Apple Tree. It almost always had perfect Northern Spy Apples. No worms or anything and it was completely wild on it's own. Those Spy's were about the size of a baseball. I'd pick about 10, then back in the truck all the way to Marquette, North on Marquette County 550 to the family log cabin just past Big Bay on the Sullivan Creek Rd. No electricity, no running water just a place out of the elements w/ a wood stove and a propane cooking stove with an oven. After I got settled in, I'd peel, core and chop those Spy's, mix in 2 Tablespoons each of sugar, cinnamon and flour, then puttin a pie shell dotted with Buttah, put on a top crust and bake it at 350 or an hour. I didn't know how to make pie dough so I always stopped in Big Bay at the General store and bought a premade pie shell in an aluminum foil pan to put my pie filling in. I was always amazed at how good that apple pie smelled when cooking it and it tasted even better. I tried to make pie dough, but something about mixing the flour into the fat with two Buttah knives escaped me terribly and I failed. Watching your video makes me want to try your method. You say the vinegar egg and a little water will keep the dough from getting tough even though you kneaded it with your hands. That is very critical. I am going to have to locate "pastry flour," I don't know what it is even. Maybe Kroger or Meijer has it. We'll see. OK, another fine video. Taught me a thing or two. ben/ michigan

An Amish woman with social media accounts and electricity at home?? Never seen that before! This pie shell looks beautiful! Loved that little piercing tool! My great mommaw would make half a dozen or more pies at a time for family gatherings. She would remove the finished pies from the dish like this, stack the pies up 3-4 at a time and slice them all at once! She had 12 kids, so it was a big family!
I have never used lard. Do you heat it up a little bit in a microwave or oven so it not hard? Or is it like bacon drippings, where you leave it out til it gets to room temperature?
