Definitely something I would like to do before the end of the year. Right now I’m focused on catching up though, as I have around 30 reviews I need to finish

I'll have to disagree, I have this set and I think the Giulia fits perfectly. I think they were trying to show off the whole scope of Italian cars in general. The Giulia just has that nice clean look, before the supercar era. You can't forget the racing history of it either.
You also have to keep in mind the Stratos was also the first ever purpose-built rally car. And the fact that Hot Wheels don't have the Ferrari/Maserati licenses anymore. So the Stratos was a great pick to throw another classic Italian supercar in there.

I view the set as cars that are are “spectacle” to look at. Hence the name of the set, not simply a set of Italian cars. For that reason the Giulia doesn’t really fit. A better fit would have been the 33 Stradale casting.
Also there’s no reason Hot Wheels couldn’t get the Maserati license back whenever they wanted. It’s not tied to the Ferrari license at all, and Maserati doesn’t do exclusive licenses like Ferrari does. So there is no master license holder hot wheels would need to work with.
