But surely when they went back in time in End Game when he met with the sorcerer supreme, she disconnected his body and forces him into astral form. If the og Hulk personality was still about, surely he'll either be in Astral form or would have full control of the body whilst Bruce was in Astral Form. Surely this shows that these two different personalities are now completely one personality?

You largely underestimate how good of a film Hulk 2003 is. Any MCU film wishes it could carry the level of gravitas Ang Lee brought to the character in that film.
