Thanks Diana. I've watched a few Stromboli recipes out here, and frankly, they are all wrong. Most people pile everything nearest to them and then roll the dough over - making a big hot pocket. The whole idea of the stromboli is that you lay out the ingredients and then roll so that the dough cooks inside the strombolo tender and chewy, and on the outside nice and crisp. You're the only one I've seen that gets it right. Mighty good looking product by the way. Many thanks!

Stromboli's are awesome. That looks delicious and annotations do work on iPads and iPhones you just have to make them active through settings on UA-cam.

Next time bring this to a pot luck or party when asked to bring something. Everyone will eat this and leave the other stuff go. :-) Good vid.
Looks delicious! I usually differentiate between a calzone and Stromboli because of the shape but also because a calzone usually contains ricotta and a Stromboli does not. #italianproblems lol

Big question: why didn't you put the marinara sauce inside ???? and why you didn't make holes ? last week i made stromboli but the dough did not cook inside, why ? i did 30mins.at 400
elimonjal Don't let the ingredients inside be too wet, such as oily or watery things like sauce, lower temp to 375 and go 35 mins or more to give inside chance to raise and bake.
+elimonjal the marinara doesn't go inside because if it does, it will just steam from the inside, making the stromboli wet and soggy. If there is not a lot of moisture inside, you don't need holes, because there won't be much steam. That being said, you can put very dry marinara on the inside and cut holes. I like the SOS though for dipping.
Ledo's pizza here in Maryland does not, I repeat, does NOT sell their dough! You can buy their sauce but not the dough! I just can't believe this. I'm on a hunt for pizza dough from a pizza place. Maybe Lexington Market in Baltimore will have it. I just know I've got to make it. Thanks for all you do!
Hopefully whatever has you in your position will change too! I have watched Diane since 2006ish? And I remember these strawberries she did with a cream cheese stuffing in the middle, they were delicious! I like the Stromboli idea because if I make my own pizza crust it'll be more cost effective.

These may sound like a stupid questions, but why do you have to put water in your egg wash/"glue"? Also, do you have to use pizza dough?
I guess to loosen up the egg a bit. It's always made with pizza dough, if it;s made with another dough it just doesnt taste the same

+John Caputo One can also mix a little tomato paste with olive oil and just give a thin coat inside to add flavor, forgoing the moisture.

The difference between a Strombolli & a Calzone is the Cheese. One uses Ricotta & the other uses Mozzarella. You also puts slitzs on the top to vent.
