Your filter is installed in the wrong flow direction. The flow should be pushing the fine mesh filter against the perferated support structure. Not super important in the low head, low flow situation you are using it; but it will also be easier for you to clean the mesh and increases the solids handling capacity.

I was speaking with the Amrut master distiller the other day, and he brought up a really interesting point I hadn’t thought of - he said “anybody can make a great whiskey using their great barrels. The hard part is making multiple good whiskeys with all of your whiskey.” I don’t envy y’all’s blending job at all!

Is there any basic "recipe"/starting point you follow when blending? Or is just throwing a variety of barrel combos and ratios until something sticks? And any chance seeing bottles in TN?
Can you guys talk about your thought process of blending whiskey, that would be very interesting. If sister barrels are completely different then how do you blend them and maybe add a rye.
Currently y’all are rolling the barrels up onto the frame of the trough for bottling. Rather than muscle em up there or build a ramp you could drop the trough to be even with the floor. I assume you didn’t drop it because the floor framing interferes.
We didn't drop the trough into the floor so that dirt/dust from the floor wouldn't get pushed into it. Eventually we'll have a small ramp or something.
I started looking into brokers and buying whiskey wholesale in Feb 2021. Most of that year was just trying to figure out how you buy it legally and where you can keep it (setting up warehouse agreements). Permits and licensing and naming/branding/design start in 2022.

Whiskey barrels aren't air tight so they are very used to seeing air. Also if you go to any distillery and watch them dump most dump into these vats like we are using and no matter how to dump into the vat it's going to experience air. Cookie is doing great again!
Drilling the barrels is significantly faster than laying every barrel on it's side and pulling the bung. Often the bungs break when you pull them so then they have to be replaced. We can keep the barrels on the pallets, drill them and plug them (a lot of distilleries use this same method we didn't come up with it ourselves) and just put them back.

When you go buy a bottle of Michters 10 was it theirs or was it brown formans? When you buy a bottle of Willet 15 year is that Willets or is it bernheim? When you buy a bottle from Four Gate was it Four Gates whiskey or was it whatever legacy distillery it came from? If you buy your car outright and you go drive it, are you driving your car or is it still honda's since they made it? Lot's of questions with the same answer here huh.

Use the damn forklift to pick the barrels up! Tilt the barrel back enough to slide the forks under them. Work like a fox, not like an ox!
It would've taken days to use the fork lift to get the barrels on the pallets stood upright. I got almost 60 of them done in like 4 hours.

Its good some of your barrels arent ready to bottle. People are paying for the aging in a non barton location, otherwise they would just buy barton.
