How to make your Buttercream Frosting White - Cake Decorating Tutorial

- Hi and welcome back to my kitchen. Do you ever find your buttercream is a little bit too yellow for what you need? In this weeks video tutorial I'm going to show you how you can make your American buttercream white.
This is perfect if your making cupcakes or a cake maybe for a wedding or even to use as a base for colouring your buttercream different colours to get a truer colour.

THE BUTTERCREAM RECIPE
340g / 12oz - Icing Sugar
170g / 6oz - Room Temperature Salted Butter
1.5 tbsp - Milk
1 tbsp - Vanilla Favouring (or favouring of your choice)

Love your channel and am planning to do some cakes . I’m still learning! Can you please tell me how you transfer your cakes from the icing turntable to the fondant covered cake boards ? Some information on this would be really helpful as I’m unsure on how to do this and can’t find the information in your videos.
Recipe for perfect cupcakes everytime. Weigh the eggs first, whatever the weight is, use that weight to measure out the sugar, butter and flour (ensure to sift) then Dont add vanilla essence, just 2 tbsps of milk. Basically every ingredient the same weight- bar the milk minus v.essence. Cant go wrong. For a birthday cake, just double the weight of the flour, it just makes the cake alittle firmer.🙂
@@tashamariasoprano3239 Hi Tasha, I usually create my cakes on a glass cutting board which I place onto my turntable. I then transfer my cakes using a long offset spatula and a regular wider spatula. I then stick the cake to my board with a small amount of buttercream or ganache.

Never mind the colour - I’m marvelling at the skill of adding the icing sugar and mixing without a cloud of it going everywhere! My kitchen resembles the North Pole when I use icing sugar 😂
I cover my mixer with a wet tea towel! Helps a lot x
lol, it does depend on how much buttercream I have in my mixer. I started the mixer on the lowest level and only tuned it up when it started to combine. I often do forget and just turn it right up and have it everywhere, lol. If I was making more buttercream I do have a lid I can put on which helps the icing sugar flying out of the bowl. Its a great tip to add a towel over the top if you don't have a lid.

I make my buttercream like this too! The only downside I have found from adding the purple is that if it's a really hot day and the butter warms up too much it can melt slightly and add a bit more yellow to the buttercream and having added the purple it gives this off green kind of colour

I always wondered why my red velvet buttercream turn into yellow instead of white. And the recipe what I made exactly step by step was paper white buttercream while mine was a pretty yellow one...

Lynz can you add thaw whitener to Swiss meringue buttercream? I can never get mine white.. or is it better to use titanium dioxide? Great tutorial by the way.. as always!
Does it work out the same with white chocolate ganache? I have my daughter's birthday coming up so was wondering if I can make the white ganache like perfect white I don't want to load the cake with fondant and my little girl doesn't eat buttercream. It would be a great help. Thank you 😊

does 10 to 15 minutes on high take a strain on your stand mixer? I've been trying to do these creams but I'm afraid I'll burn my stand mixer doing so
Hi, it really depends on the stand mixer you have. I have a Kenwood KMix and also an AEG mixer and I use both for buttercream and also mixing bread dough which can take a while and both of these have been great. I have had the KMix for over 10 years now. I have had a few hand mixers in the past, so I don't think the motors in these are as good as the stand mixers. What mixer are you using?
@@CakesbyLynz oh Im not sure this brand is known there, its called Blackline and it was a bit on the budget side. But judging by what u said I guess I'll just have to trust the process and also my motor haha, thank u for answering

Hi! Thank you!! I needed this lesson. Could you please show me how to make baby blue buttercream? Mine always turns out a green color!
Hi Valerie, you need to first make sure your base buttercream is as white as you can get it like in Liz’s tutorial, then start slowly adding the blue, but make sure it is an actual blue-I have found a lot of blues actually have a lot of green undertones so you are already starting off on the wrong foot. If you don’t get your buttercream white then it’s going to look teal-ish because yellow and blue make green. Hope this helps.
Hi Valerie, This is exactly what you need to do for baby blue buttercream. Normally when you add a light blue or pastel shades to buttercream it picks up the yellow tones, so the blue mixed with yellow becomes green. If you whiten your buttercream first all those yellow tones are taken out, so when you colour it blue it is a true blue and creates a perfect baby blue colour.

I use Fractal Colours white gel colour to lighten white chocolate ganache to use for drip effect on drip cakes. Makes a big difference.

How do you keep the frosting from getting too soft as you use it. I can only do one flower before my frosting becomes too soft v
Hi Tracy, When doing flowers I find if you add a small amount of buttercream into your piping bag at a time. Because flowers can take a little bit of time as you hold the piping bag your hands are warming it up which is making it go soft, so just small amounts at a time.
Is the butter salted or unsalted can someone reply e here
@@HannahStephen-l8s Hi, personally I prefer the taste when using salted butter. I always use salted for my buttercream, but you can use unsalted if you prefer.
I knew purple would neutralize any yellow tones mainly due to cosmetology and having to memorize the color wheel but never thought on applying it to making white buttercream. Learn more everyday!
Same, i use a drop of purple food color (gel)
Exactly me right now! I’m a cosmetologist too & I’m almost so upset at myself for not even thinking about this before!
The amount of purple is only minute …otherwise it can turn slightly a tinge of grey.
When you add "Color" to a frosting that starts out slightly Yellow you will definitely see a difference in your finished color. PINK will take on Coral, GREEN will go towards Blue, etc... etc...
Indeed, I tried to add a tiny violet to whiter the buttercream but when I added pink, it turned coral :((( What can I do to get a nice pink?
It worked! My frosting is finally white I'm soooooo thrilled!!
So add 0.00001% purple? ... Then add 10% white.....????

I've never used shortening in my frosting before because I've always used the beating for a long time method. Works like wonders!!
Do you beat the butter first for a long time or beat them together for a long time?

Also, you can add a dab of purple coloring to cancel the yellow tint

I would have never thought to use a dash of purple to make the icing brighter. I also like the way you compared the finished product with other ingredients that are similar in color as a point of reference. Fantastic video!

I use both butter and shortning. But I use transparent vanilla extract. It does not turn the icing yellow like the colored variety. If you need it whiter, add white gel food coloring.
What happens if you add the whitening gel directly to the original recipe without beating the butter for a longer time or removing yellow tones with purple gel?
I was thinking about it too... I was worried that all this video is just to say "add white food coloring" and the extra steps were just to expand it.
I can’t wait to try this today!! I’m just trying to figure out how my moms buttercream frosting came out white all the time, I watched her make it, and never saw her use a whitener, nor purple either. Could it be that butter has gotten more yellow over the years? I remember when real butter was an off white color, but she did use butter AND white crisco in even measurements.. I wonder if that’s the reason hers came out white?
Also when I baked cakes for my girls 25 years ago, my frosting also came out white back then… makes me wonder sometimes…

Hi Ashish, yes in my recent rainbow drip cake tutorial I added the powdered whitener to my ganache drip to make it whiter. You can definitely use these techniques for ganache too. Just add the purple and whitener to the ganache once the cream has been added, else if you just add them to the chocolate before the cream it can make it seize.
