What you do is first learn the scales he has posted. Then the chords. Then first time playing through, just play the root notes only to get the groove down. Then try adding an extra note or two next time through and so on. You can do this! Don't give up.

Wondering why DM7 is not D F A C#? or is it by default a flat 7?

when you say that a chord is a m7 or a D7, the 7 is always flat. If you want a major 7 (a C#in this case) one would write Dmmaj7 or Dmaj7
