    INGREDIENTS:
    Pork ribs - 1 kg
    Ginger - 50-70 gr
    Bulb - 1 pc.
    Allspice - 3-4 peas
    Chili pepper Serrano smoked - 1 tsp
    Cumin - 1 tsp
    Coriander - 1 tsp
    Soy sauce - 1 tbsp.
    For the barbecue sauce:
    Ketchup - 3 tbsp.
    Soy sauce - 3 tbsp.
    Balsamic cream - 2 tbsp.
    Pomegranate sauce or honey - 1 tbsp.
    Smoked paprika - 1 tsp
    Salt, ground black pepper - to taste.
    Cooking:
    Prepare all ingredients.
    Wash the ribs, remove the film from the inside, cut into 1-2 bones. Peel vegetables.
    Bring water to a boil in a large saucepan. While the water is heating, cut the onion in half and heat the cut in a cast iron or other pan without oil for caramelization and light haze. It's long, so I did it with a gas burner. Repeat this with the garlic, cutting the head across.
    Put the ribs into the boiling water. As soon as the water boils again add the sliced ​​ginger, onion, garlic, smoked serrano pepper, allspice, cumin, coriander, soy sauce and salt. Cook ribs for at least 30 minutes until tender. As a result, the meat will become soft, but keeps well on the bone.
    While the meat is cooking, prepare the barbecue sauce:
    Pour ketchup, soy sauce, balsamic cream, pomegranate sauce, sweet paprika into a stewpan and mix. Heat over a fire until hot.
    Coat the ribs with the grilled sauce using a brush. Send the ribs on a baking sheet to the oven preheated to 220C for 10-12 minutes for caramelization. Remove the ribs from the oven, coat with the sauce again and again in the oven at 240C for 4-5 minutes.
