Sugar is a carbohydrate because it’s molecular structure is C6-H12-O6 Carbon + hydrogen + oxygen makes up sugar. When the Carbohydrate bonds are broken(we call that digestion) it releases energy. The energy we call calories in food. Carbohydrate foods are high in energy but the body can slow the absorption of the sugar by eating fiber or protein at the same time. Carbohydrates are simple structures but protein and fats are complex molecular structures that take longer the break apart which is why they don’t cause a spike in blood glucose. So eat fats like olive oil by using it to cook or drizzle on vegetables and eat plenty of protein with each meal. Try to eat complete meals and avoid snacking as much as possible. Avocados are also rich in oil, black olives hens olive oil, most nuts like walnuts too. Eat proteins with your carbohydrates so you can enjoy the benefits if both and maintain a healthy blood sugar level. FYI I personally don’t eat any nuts or seeds at all except as oils because for me it raises my blood sugar too high. It’s unusual but I just have to accept the results of testing myself after eating 😢 11:58

As a diabetic 2 human, I have to say just eat small normal portions, stay away from empty carbs and sweets . My doctor said just eat normal, a variety of fruits veggies and lean meat. My sugar was and still is a roller coaster, it's not easy, but there can be a balance. .
