I think it's only a problem if a restaurant says it has avocado but it doesn't. I actually think highlighting a salsa verde with the zucchini would be interesting to people! (especially in california because you know we hippies love vegetables)

I love them calabasa salsa myself. I sauté the jalapeño, onion, and garlic with vegetable oil. Then I pour that infused oil in with the veggies into the blender with the boiled tomatillo and calabasa. Just don’t use olive oil. It throws the flavor off.

I actually don't have to have avocado in my salsa verde to love the flavor, but I don't think I would want squash & oil in it. Those first ingredients you listed are what makes a good salsa verde a mi. Tomatios, jalapenos, sebolla, garlic, cilantro, sal, etc.
I think the scam is on those who don't try both. They sound délicieux! In my part of the world, it's very hard to find avocados that are not the consistency of 40mm grenades, so yes, this is for me. Then again, I have never seen a tomatillo in ANY grocery stores here...
I suspect that the added oil in the fake salsa goes a LONG way to providing the mouth feel and creaminess that avocados are famous for. Salsa doña does the same thing…. it’s nothing but jalapeños, garlic, salt, and oil… whip it up in a bender (emulsifying it) and you’ve got creamy goodness.
It's only a negative if it's a pale comparison in taste to what it's trying to imitate or if it's just bad. Just rename it Zucchini style and it's just another sauce entirely for the menu..You'll think I'm crazy but I'm gonna make the Fakeuacate and use melted butter instead of oil and try to get that richness in flavor just to take it to next level.

I use avocado oil in all my salsas, still neutral tasting but a lot healthier than any vegetable or seed oil… salsas basically are healthy nutritious vegetables, why not add a healthy oil as well

It's amusing. Of course they are both great salsas. Leaving out the avocado or the squash and using more tomatillos makes a good salsa verde, too.

I used to have a taco stand and would use a head of lettuce instead of calabaza. You can add a bit of jalapeño juice for longer shelf life.😅

Squeeze a half of lime in the avocado mix, blend it up, and it will stay bright for a couple days.

If you grow zucchini in your garden, ANY new way to use them is a good thing! They are very prolific.
