Coconut Pumpkin Rice 🥥

This Pumpkin Rice that was simmered in coconut milk is just absolutely amazing!!
Simple and easy, melts in your mouth, flavorful!
This is indeed a must try recipe
Ingredients
2-3 Cups Pumpkin (dice)
3 cups Rice
4 1/2 cups coconut milk 🥥
1 cup dice onion, garlic, bell peppers and fresh thyme
2 tbsp coconut oil (or oil of choice)
Salt to taste
2 tbsp butter
Whole pepper
2 stalk scallions
Use recipe as a guide
Taste and adjust

Nice Vincy dish. I always loved when my dad cooked pumpkin and rice and as an adult I still do it, I also add pumpkin to my green peas and rice. Delicious always.
