    Nice honest review. I would love to see more cookware reviews. Pans specifically. I like non-stick, but many people have recommended that I stick with cast iron, I feel like they both have their purposes. I've also heard that stainless has amazing non stick properties when heated properly, but that doesn't help much when simmering. The choice is difficult and some info on something like that I would love to see from someone I trust to be honest such as yourself.

      Check out carbon steel! It can be seasoned to have non-stick quality like cast iron, but it's lighter weight.

    Absolutely love the videos and the channel, man. UA-cam is a war of attrition and playing the algorithm game a bit. You've got a really refreshing take on the cooking scene and if you keep incrementally improving the audio and visual side of things I have no doubts that this will grow into something big.

    I love the honesty in your videos. I have had some $7 Chinese knifes that I have loved over the years. But I recently purchased a Zwilling brand Nakiri that I love. German steel japanese style made in Germany. I was also wondering if you have heard any thing about them. So far what I purchased I love.

    One reason it can be good to do the ‘unboxing’ segment is it lets us know what the genuine product ships in/with.
    Not much of an issue if you’re buying from a shop but there’s definitely some dodgy sellers online.
    It’s cool seeing genuine first reactions to seeing or holding a product even if that part is filmed separately before you’ve tested it

    Dang! I bought the koyuku nigiri a couple weeks ago after watching your review of STCG “nigiri” and now you have an affiliate link! Drat. At any rate, love your honest reviews. Sad to learn my “Japanese” knife is actually a Chinese knife, not because it’s “Chinese and therefore automatically of lesser quality” but that it isn’t as authentic as I was led to believe. That said, it is a nice knife I have to say.

    Another nice review.
    When I see brands like this, I get many "red flags" going off.
    The Chinese made "VG10" with Japanese logos and marketing gimmicks, for starters, are quite off putting. Although they are at least honest about it not being Japanese VG10.
    That said, the quality and price points look to be quite tempting.
    My biggest question would be about the blade grind. When you mention they are a little heavy, it reminds me of similar type Chinese knives with a grind to thick to slice cleanly.
    Do they have any wedging issues on things like carrots for example? A Japanese style nakiri made in China, would be disappointing if it was too think to cleanly chop and slice hard veggies.
    Oh and I did check out their web site, and it looks decent. But one amusing thing jumped out at me. The cleaver they sell that I think you had on the right, they describe as a Japanese cleaver.
    And while I've seen Japanese companies make them, they always describe them as Chinese cleavers. So another giveaway that they intend to imply Japanese culture when it really isn't.
    I noticed their other less expensive line was labeled the samurai line. Which I doubt any Japanese company would be caught dead doing. But they look like a decent deal from what I can see.
    Lesser grade of stainless, and probably a bit less care on fit and finish. But a $35 Nakiri is an impressive price point, if it works well. Emphasis on that if.
    The cheaper line seems to have identical geometry, but differing materials. And for that price, I'll round the spine myself if needed.
    I did check the Amazon reviews, and did find a couple with issues. One with concerns of the blade being too thick. And another quality control issue compounded by a failure of their C.S. to resolve it properly.
    I have been burned twice buying Chinese made knives that had substandard blade grinds, that made for poor cutting experiences. So I tend to be careful when looking at this sort of Chinese knife.

    I’ve found these knives to be very good and well made. I do like heavy knives. Edge retention is great!
    Obviously you must take good care of them.
    They stand up to the quality of anything.

    I bought 2 knives at the same time a few years back, one Kyoku Gyuto and the other a Dalstrong Gladiator. The Kyoku will still go through a chicken with very minimal effort, but the Dalstrong's edge rolled the first time I tried to cut through some frozen sausage. The VG10 knockoff is damned good and it lasts. Minor touch-ups to the edge only.

    The "globally sourced VG10" is nearly chemically identical to VG10, but I've read the real variable is the heat treating. The Alibaba knives are kind of like a lottery wither you're going to get one with a good or poor heat treat. Which is a big deal for hardness and edge retention. That's why I wouldn't mind paying a little premium to get from a reseller that is at least doing some quality control before it gets to me.

    About producing in china: If you order at a chinese factory, some factories make more items than you ordered and sell the rest off to local companies. Those additional items can have failed QC for the main order or are practically identical. Often those will never leave china and are sold at local markets, sometimes they get sold everywhere.
    Happens with knives, keyaboard accessories, everything.

    Kyoku is no joke! Some criticize that they are heavy. I’ll give you that. Personally, I like a heavier knife. They are better than some of the top brand competitors. Wustof, Henkel, victornox and certainly pampered chef.
    Kyoku is better than all of them. Wether or not they are a Chinese company or not, they’re a great knife!

    that’s so weird that kyoku is identical to dalstrong. One of my favorite knives is a $4 chinese cleaver. It’s a piece of shit but with my shapton glass stones, I put a 30000 grit mirror edge on it and it’s hilariously funny to chop with.

    I could be wrong, but isn't it possible that those aliexpress sellers are just making knockoffs of Kyoku? Chinese clones of stuff gets made all the time. I don't know.
