I really enjoyed your video…as to your insect problem, I have found the use of Cinnamon Essential Oil 1% spray will keep all small (critters) ants & the such away (they Hate the Smell) from all plants without any harm to the plants, and Organic. A suggestion you may like to experiment with! imho
Quesiton about your seedling grafts. I see you let many different shutes come out from it, but wouldnt it be faster to just have big trunk and then tip it, and let it umbrella out at the top?
Your camera guy should start his own channel instead of piping in whenever he likes. It's annoying, unprofessional a detracts from the excellent content you usually provide.

How long it would take for the grafted seedling to fruit?
Anywhere from 18 months to 3 years in my climate and experience...
Why are the nee grafts so spiny? Is that how it supoose to be?
How long do we need to put the plastic on
a few days... I don't cover them at all with plastic and they do well.

No. Look up what grafting is for, cross pollination is what creates hybrids
