You can dry the leaves of corn for later use...tamales,etc. And they can be used fresh for wrapping corn dough. The hair of the corn fresh or dried is amazing in tea

We made a decision last year that we wanted to try and work towards sustainability from only our garden and the community garden in town (if needed. We have plenty of land to grow whatever we want, so we want to leave the community garden for the families in town who need the fresh veggies more and don’t have the option or time to grow their own) we did an “experiment” this year with only a few plants, and they’ve taken off, and we had to rehome some groundhogs to the nearby state park (no killing, but the park is much better suited for them). We decided that this was doable and we are already planning a huge garden for next year for nearby family and friends to use as well. With some help from my uncle who is a very seasoned gardener ☺️ Honestly, it was your videos and Chanel that helped inspire us to use the land we are on.
You can preserve potato's with a laundry basket, newspaper. Pack in layers and place in a dark, cool place. See how it goes! We tried it in South Africa in the winter and it worked really well. Also shredded paper can work instead of newspaper.😊

Squash/pumpkin/carrots/ potatoes are so great in curry! Preferably, Japanese golden curry usually comes with carrots and potatoes in restaurants 😋 its so comforting in colder months 👍 I'm sure the winter squash would be delicious in it too.

Not sure if you're vegetarian (oops just hear deer tallow so nope)but if you've any potato left steam equal parts potato and squash and make gnocchi. Ive tried with just winter squash but it really didn't hold together as nice as I'd like. I do use eggs and cheese in my gnocchi but its a fall favorite. I've used eggs and nutritional yeast before too when I was out of cheese. It turned out lovely. Our house hold is doing a freezer February and trying to eat out of our freezer and pantry as I might be a bit of a food hoarder lol. Other than milk/butter/eggs we've been trying to eat most meals from our stores of summer veg.

I grew about 70 pumpkins/winter squash that I attempted to store in a shed for the winter this year, but we got a bad cold snap around Christmas and my shed couldn’t protect the pumpkins well enough and they all froze and got destroyed. I like to roast the squash with some onions puree it, add coconut cream & chicken stock, addnutmeg, saly & pepper, the best soup ever!
