I’m a lifelong Texan and can tell someone isn’t from Texas by the way they pronounce oil. However, I have a friend and former coworker who is a displaced New Orleanian who was giving me a recipe and I was writing it down. She kept saying “earl” when talking about the recipe and I finally asked her who was earl. She looked at me like I was stupid and said earl, cooking earl 😂. I had no idea that’s the way it’s pronounced down there!

No seed oils here either. We purchase very few processed foods, and those that we do- are closely monitored for ingredient changes. Sneaky how they change ingredients all the time. Just getting ready to order a 1/2 hog from our neighbors, and of course I'll ask for the lard to render and the offal (to make dog treats). We buy our beef, chicken, pork and raw milk all from local farms within a 2 mile radius of us. Living rural has benefits 😉

Trying To Put My House In Order and Prep as much as I can. We are gonna have a few raised beds with veggies and whatever else we are gonna plant. We have two cherry trees and 2 nectarine trees. I would like to put a few apple trees in. We start our seeds in the basement then put them out after the frost season is done, usually around Morhers Day. We have Grow lights on a timer to make sure they get enough. They do really well. Thanks for All You Show Us. Appreciate You, God Bless Your Beautiful Family!!!

We used to raise guinea hogs and had some butchered and sold some. The lard from these pigs is gorgeous. Pure white and not even the leaf lard. I cooked and strained several times and cooled. Bought moulds and pour the lard into the moulds. Put in fridge to totally cool, then into freezer. Once frozen, I popped the lard cubes out and put in gallon freezer bags. I could take out how many cubes I needed.

I always enjoy seeing what you are doing. I think your lifestyle is ideal. Your children are so fortunate to have you and Colby to train them up in the way they should go. It's ironic that my parents grew up in a time when this was the norm for most American families. The irony is that they lived more like you guys do now and yet when all of the "progress" started in the 50s and 60s, they went with buying processed foods at the supermarket. Of course, I don't think the foods were processed as poorly as they are now. I do remember all the hype about pasteurizing/homogenizing milk. The government really sold that hard. My dad did change his mind about it all in the late 80s. He told me then that it was the way the food was processed that was making people sick.
I do use lard occasionally. I will be watching your video because I'd like to make it and put it up myself. I watched someone do it years ago, so I know it isn't difficult. We are fortunate to have a small family run butcher shop fairly close to us. They have the best pork chops and sausage. They do meal plans every month. You can get so much meat for a very reasonable price. I will ask them about the lard.
I use olive oil for sauteing and coconut oil for baking and popcorn. I bought sunflower oil because I thought it was a safer oil that canola. I only use it occasionally, though.
Thank you for all of the knowledge you share with us. God bless you all.

I’m trying to get to where our family can do the things you do. We have a lot of stomach issues, runs in the family. I know for a fact it would help us so much

We bought a small greenhouse 2 yrs ago and started growing our own vegetables with non- GMO seeds from Survival Seeds. We have eaten fresh kale, lettuce, green onions, radishes, bell peppers, etc., plus herbs. At 82 & 71, we are healthier than most young people who live in our area. Thank you Mac's for your tips.
