The problem with that is the event already has catering. If Applejack made any kind of profit after just showing up with a stall she'd be stepping on the hooves of somepony important. Whether the caterer if they got paid based on how much was eaten, or the treasurer or organizer if the caterer was paid up front for the whole spread, and due to some random pony (Applejack) setting up shop right outside the biggest event of the season a lot of it went to waste and a lot of money alongside it. Really, her making even a single sale was better than she should have gone in expecting, even if it was ultimately a net loss given how much she prepared.
Episode 3 is one of my favorite season 1 episodes, it's kinda funny seeing Twilight's friends go out of their way just to get their hooves in that extra ticket, But at the same time i feel bad for Twilight both because the extra ticket was a burden on her from the start and because all she wanted was something to eat.
For real ;) Especially when you consider that it was her who gave Twilight Sparkle the checklist in the first episode, with all of her soon-to-be-friends listed on it as the ponies in charge of the subsequent tasks ;)

It’s interesting to hear that Ashleigh Ball was still trying to find AJ’s voice here.

This is a good episode. A great showcase on how this show can shine even if they aren't fighting a villain.
