I really like Longaniza! It’s cool how the inside of the casing is chopped instead of ground. I think the ground can sometimes lose a lot of flavor quickly. Unless, you are incorporating the cooked liquid into whatever you‘re making. There are a few places up here I can find the Longaniza. Oh!
