    Save my recipe for Beef Stew! This hearty stew is a perfect Fall recipe for those cold evenings. Start with cubing 1.5 - 2 pounds of Beef Chuck Roast, season with 1/2 tbsp of salt, 1 tbsp of Worcestershire and 2 tbsps of flour to coat all the beef. In an large pot heat 2 tbsp of avocado oil on medium heat high heat and sear the beef a few minutes on each side to form a crust. You most likely have to sear the steak half at a time to not over crowd the pot. Remove the beef and add another tbsp of oil, 1 cup chopped onions, 2 cups chopped celery and 4 minced garlic cloves. Cook on low heat for a few minutes and then add a sprinkle of oregano and 2 tbsps of tomato paste. Cook for a few minutes before adding 32oz’s of beef stock. Cover with a lid for 30 minutes. Lastly add 2 cups sliced carrots and 4 quartered yellow potatoes, 2 cups of water and 1 tbsp of salt

      Dutch oven's work the best in an oven. They're the original slow cooker and you won't get stew burning to the bottom of your pot like you do on the stove top.

    I don't drink alcohol either but the alcohol burns off or evaporates and the wine really does enhance the flavor.

      ​@@achannel1818Who lied to you and told you that ethanol (boiling point 173°F) doesn't cook off in a pot boiled at 216°F for over two hours?
      You could literally dump it in at the end when removing the stew from the heat and the stew + dutch oven would have enough residual heat to remove all the alcohol from the dish.

    i don’t understand these comments. yes, alcohol cooks out. but some people are sober and do not want to have alcohol in their homes whatsoever, what is so hard to understand about that!! great recipe!!

      Just to be clear, alcohol does not cook out. You have to be cooking it for 3 hours. And they're still trace amounts also for religious people. Not everybody wants to have alcohol in their system.

      So they use the beef broth , and she should stay away from beef Bourguignon that must be made using wine . Also if you cook with wine use a wine that you would drink , avoid using cheap wine it will affect the flavor of your dish .

    We are an alcohol free house as well so when a recipe uses beer or stout I do whatever I have. Coke,root beer cream soda works really well. If it calls for red wine, the best thing I have found is a 100 percent grape juice or for white wine, white grape juice.even better if you can make your own grape juice and just reduce it down and let it cool to room temp before adding it to your recipe

      @@kirstymartin471 bruh literally anything to give them flavor i think grated lemon zest helps to cut the bitter aftertaste from the asparagus but everyone does it their own way and that’s fine! like i hate potatoes in beef stew that’s why i have to make mashers

    I worked in Oklahoma city one year and ate at this Vietnamese restaurant almost every night. The beef stew with french baguette was the best!!!!!

    I’m also alcohol free. There are some really great de-alcaholized wines out there that totally work really well for cooking. You should try them

      A little red wine vinegar can balance the dish, like how most Asian sauces have vinegar in them.

    We did beef stew a lot in northern & midlands in England but we had vegetable shortening dumplings and some more variety of veggies. Like runner beans, celery, peas, red onions and white, canniloni beans, or black eyed beans, turnip and swede much more variety, even lentils.

    Red wine vinaigrette with low to no sugar is a great alternative for the alcohol part. We call it “en fricasé” in Puerto Rico.

      This is my Spanish MIL secret to awesome stew, a good 3/4 cup of wine vinegar (no alcohol at all)You can play around and try other aromatic vinegars, Modena is awesome!!!

    I Love All Your Recipes! So Easy to follow. I Love how you take your time to show us. Our House is Alcohol Free also but when using wine for cooking the alcohol burns off & you are only left with the flavor. Sometimes in Some recipes it takes it to the next level. Thank You for your videos! 😊❤

      They sure do and the best would be wild picked ones.
      Some kind of bolete and chanterelle mix would be awesome for this. I mean I cooked it similarly like this and with mushrooms many times.

    I deglaze the pan after I sear the meat with homemade chicken broth.
    Then, I season, flour and saute my vegetables (except potatoes) separately.
    Then, I'll add them in cooking order, slowest to cook, first to add.
    Chao.

      I get a bundle and tie it in a string and throw it in, so I don't have to fish out stems. The stems add flavor, too.

      I agree. Rosemary can get too overwhelming. Myself, I much prefer thyme and bay leaf.

    Looks great. On beef stews etc I always add some bay leaves and whole all spice. Also more onions, and I do not add flour to the meat, rather at the end to thicken the gravy with a flour/water slurry. The extra onions usually thicken the gravy nicely.

    I made a very similar beef stew in my slow cooker yesterday. Because I am concerned about my blood pressure, I added a tiny pinch of salt and used no salt-added beef broth. It tasted fine without the salt. A healthier choice especially for older adults.

    I just made this after I saw this video on my morning coffee run took a turn into ShopRite and went to cooking . Just ate it and confirm it was delicious I didn’t use potato 🥔 but I made cornbread as the carb and stuffing with potatoes bread . I also did add the red wine 🍷 it was delicious 🤤

    I love making beef stew, beef soup or roast beef roast, and I never ever use wine, yes I know wine burns out, but I choose not to use it! Just like this is her recipe, she chooses not to use alcohol in her home, in her recipes, I think it's so disrespectful for people to make so many ignorant comments about her personal choice, if you want wine in your beef stew ,use wine, but please don't leave disrespectful comments, not necessary! 🙏🏽👍🏼👍🏼😪

      Everyone plays with recipes. If you want wine, put in a splash of wine. If you want thyme and/or bay leaf instead of rosemary, do it. Nobody needs to critique the choices of others.

    Absolute perfection. I usually use venison/deer meat that I've harvested and processed myself, but it doesn't matter much. The rest of the instructions are golden!

    You don't need the expensive Dutch oven, just a heavy-bottomed pot. It could be an electric one, a crock pot, a non-stick, or stainless (just make sure it's a good thick one). I got most of mine from thrift stores, matched them up w/ lids i found for them in different sections. As long as they fit, & were good quality (you'd be surprised @ what you can find!), you're good to go!
    As for your meat, bottom round, chuck roast, shoulder roast, are all good. Your brother can be veg, ½ each chicken/beef or beef/veg for a really good balance of flavors if you don't/can't do wine/alcohol. From there, your sources/herbs are your choices but my suggestion is to not get too fancy: 1 or 2 med (1½ - 2" bay leaves, 1tsp thyme, 1 tsp oregano). The divine Trinity: onions, carrots, celery but omit the celery if you don't like it, sub it w/ parsley, either dry or fresh if you have it).
    Add aluminum foil under the lid if it doesn't fit tightly & it's NOT a Crock-Pot. Let it simmer after it comes to a boil, meaning put it to as low as it will go on the stove top, or to braise in the oven at 325F for 2 hours.
    As i read in the description in the Test Kitchen recipe in my cook book for roast beef, "the meat will fall apart with a stern gaze". It won't be THAT soft, but you'll have a wonderfully tender stew w/ plenty of dense soup & veg.

      You have no clue why she said that. We're an alcohol free house too because my husband doesn't drink but I still like edibles. I chose to give up alcohol in support of him. Has nothing to do with being uptight. There could be a variety of reasons they don't allow alcohol in their home.

    That works ok, but maybe try two suggestions:
    1. Don't ever use your lined dutch oven with direct stovetop heat. The lining inside will eventually fail and you can burn the stew too easily.
    2. Instead, always use the Dutch oven inside an oven, with temp set for braising (never over 250°f, preheated & pre-oiled). Prepare all ingredients exactly as you did in a good cast iron or other non-teflon skillet using the stove top. When everything is fully prepped and combined, pour the ingredients into the Dutch oven and bake until ready to add the carrots. Return the covered Dutch oven to your preheated oven and cook until done. It will likely take an hour more or longer than your stovetop cooking time, but the incomparable texture of the meat without any chance of burning will be the payoff. Thanks for your great video! 🙏

    Just made this in my Instant Pot. Smaller portion though. This is really good and I’m not a stew fan. Since I did it in the IP, I had to add a cornstarch slurry to thicken it. Beef is tender enough for my mom to chew. Perfect for a chilly day👍🏽

    Beef stew and pot roast are my family's favorites. Been making one or the other, once a week, at least, for decades. Definitely my "go to" easy and quick family meals.

    This is similar to mine, but I add a bottle of beer to mine. I also make a roux with 1/3 of a cup of flour and 1/3 of a cup of avocado oil and cook it to medium darkness. This makes the stew gravy-like, not soupy. I also like to use bone-in beef short ribs and I will add beef soup bones too. The collagen from the bones adds more flavor to the stew.

    I have the same white Staub Dutch Oven and I use for almost every meal. Made a beef and barley soup just the other night. It started out almost identical to this.

      If you don’t use very high temperatures, alcohol takes up to 3 hours to cook off and that’s only if you don’t use a lid. Better use dealcoholized wine.

      The Alcohol is cooked out especially in a recipe like this but you can also purchase non alcoholic wines to use in these scenarios because of the flavor it offers. I use them often and it tastes the same as using real wine.

      ​@@maciaaa5859Wrong. Alcohol is not cooked out. That's a huge myth. The alcohol mixes with the water in a dish and they both evaporate together. If you still have a good amount of liquid you still have alcohol.

      @@frank234561 actually alcohol evaporates at 173 degree Fahrenheit. It removes 60% of it in around 15 minutes of simmering. the longer you cook, the more you remove.

    I make various beef stews all the time. If you don't mind the cost add or replace with short rib. Only about a 1/3 of the chuck is great. The rest is just tasty.

    Try first cooking strips of bacon cut up into small pieces, braise it in the bottom of your pot. Then add beef as per your recipe. The bacon adds sooo much flavour to the dish and the red wine added after cooking beef brings all that flavour up into the stew!

    I agree you don't need wine, however, I too am alcohol free and it doesn't take much for the alcohol to evaporate. That alcohol will be long gone by the time you serve it!

      Sigh, For the millionth time, people that is not true. It alcohol only cooks off if you're sitting there for 3 hours on high heat, cooking it. Otherwise, there is still booze in your food. Not everybody wants alcohol in their house and in their body

      The numbers I've seen were 5 hours for 95% evaporated, so yeah im also incredibly tired of those myths

      The evaporate point for alcohol is 173 degrees. In this video she has the stew cooking at a simmer (over 212 degrees) for well over an hour. I stand by what I said, but the alternative is to simply use "cooking wine" which is alcohol free

    Even in an alcohol free home you can add the red wine, because the alcohol in the wine gets cooked off and you end up eating just good flavor, no alcohol.

      Yeah, but it can be dangerous for recovering alcoholics to have it in the house. I’m not saying that’s the reason they are alcohol free, but it’s a possibility.

    If you cook/roast the beef (on high for a few min and than reduce the heat) without the flower and leave it in, you don’t need the beef broth, you only need water and spices of course.
    And I would cut the potato’s and carrots smaller in size ✌🏻

    I have to be honest I make beef stew. I’ve made it my entire life and even though I haven’t made it in a couple of years where I to make it today it would taste the same as my previous beef stew, so I was prepared to diss your stew until I watch the video you didn’t wonderful job and I use a different technique I use Either a crockpot or an instant pot stew looks stunning. It’s the right consistency it’s got the right ingredients. We made a little bit on some of the spices but you got your Worcestershire. You got your rosemary and a lot of the other stuff you’ve done a wonderful job and I bet you it taste really good now I don’t know how tender your meat is for me that’s always the most important thing, so I hope that your meat is tender and taste as good as it looks because it looks absolutely wonderfuland I would eat a dish of that in a second

    They selling cooking wines in grocery stores. It really adds to the stew so if you’re not a drinker you can still enjoy the flavor even though its not exactly like a quality red wine it’s a possible substitute

    Instead of wine, I deglaze the pan with Balsamic vinegar. I let it cook off for 1-2 minutes then add my broth. It really intensifies the beef flavor

    wait to put in the garlic. Saute the Holy Trinity until soft, THEN add the garlic. Saute with the garlic until it becomes fragrant, about 30 - 60 seconds, then add the broth/wine/whatever. Over-sauteed garlic can get bitter.

    White or red, or balsamic, wine vinegars are excellent substitutes for actual wine in recipes like this. I prefer white but they are all excellent
