Filling
4 tablespoons (60 ml) olive oil
2 cups (300 g) chopped yellow onion
2 lbs. (about 907 g) 90% lean ground beef

2 teaspoons (4 g) dried thyme leaves
1 teaspoon (5 g) salt
1 teaspoon (5 g) ground black pepper
2 tablespoons (30 ml) Worcestershire sauce
4 garlic cloves, minced
4 tablespoons (30 g) all-purpose flour
4 tablespoons (60 g) tomato paste
2 cups (480 ml) beef broth
2 cups (300 g) frozen mixed peas & carrots
1 cup (150 g) frozen corn kernels
Topping
2.2 lbs (2 kg) potatoes
1 stick (125 g) butter
1 teaspoon garlic powder
1 teaspoon table salt
1 teaspoon black pepper
1. **Heat the Oil**: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and cook until they are translucent, about 5-7 minutes.
2. **Cook the Beef**: Increase the heat to medium-high and add the ground beef to the skillet. Cook the beef, breaking it apart with a spoon, until it is no longer pink. This should take about 8-10 minutes.
3. **Add Herbs and Seasonings**: Stir in the parsley, rosemary, thyme, salt, and black pepper. Cook for another 2 minutes to let the herbs release their flavors.
4. **Incorporate Garlic and Worcestershire Sauce**: Add the minced garlic and Worcestershire sauce to the beef mixture. Cook for about 1 minute, stirring frequently.
5. **Thicken the Mixture**: Sprinkle the flour over the beef and stir to combine. Add the tomato paste and cook for 2 minutes.
6. **Add Broth and Vegetables**: Pour in the beef broth and stir well. Bring the mixture to a boil, then reduce the heat to low. Add the frozen peas, carrots, and corn. Simmer for about 5 minutes, or until the mixture thickens slightly. Remove from heat.
Potato Topping Preparation:
1. **Cook the Potatoes**: Peel and cut the potatoes into chunks. Place them in a large pot, cover with water, and bring to a boil. Cook until they are tender, about 15-20 minutes.
2. **Mash the Potatoes**: Drain the potatoes and return them to the pot. Add the butter, garlic powder, salt, and black pepper. Mash the potatoes until they are smooth and well-combined with the seasonings.
Assemble and Bake:
1. *Preheat Oven* to 400°F (200°C).
2. **Assemble the Pie**: In a large baking dish, spread the beef and vegetable mixture in an even layer. Spoon the mashed potatoes over the top and spread them out in an even layer.
3. **Bake the Cottage Pie**: Place the baking dish in the preheated oven and bake for about 25-30 minutes.

A little sprinkling of Parmesan cheese on top of the potato gives it a nice crisp crunch taste.
@@PotOfPlenty i’ve been watching different ways on UA-cam to make cottage pie or as we say in the US shepherds pie. There’s so many different ways. I’m vegetarian so I will start with chorizo non-meat. Of course it’s delicious, but spicy.
You know, the way I see it, they call it shepherd's pie because it's like a guardian for sheep/lamb - keeping them all safe and sound.
And when it comes to cottage pie, it's like the opposite, just beef or whatever vegan substitute you're into. It's all about that cozy, down-to-earth goodness!
