Hunter’s private tax returns were private. He did not work for the US Government. Trump technically did not have turn over tax records, though he did in one year as POTUS and failed to do so.

Why is it important that Weiss was appointed by Trump when we know the nomination would have gone nowhere without the OK of the two Democrat Senators from Delaware? There are many possibilities, all of which fall under prosecutorial discretion. Two of such possibilities are: (1) the prosecutor determined that the evidence was insufficient to bring charges; and (2) those facts fit the elements of a different crime with a longer statue of limitations and the prosecutor intends to bring those charges for whatever reason (easier to prove, harsher punishment, etc). Every time a prosecutor chooses not to bring charges, the statute of limitations eventually expires.

Overseeing the investigator is not interfering with the investigation
Well, it would mean to make certain calls. For example the statute of limitations decision. Weiss may have wanted to save his breath on that. Garland saying he should investigate it would have been misconstrued as sending Weiss on a wild goose chase. So I don't think the answer is that easy.
I think Garland as someone appointed by Biden did well to erect some kind of wall of governance. Weiss is not a rookie. If he doesn't want to pursue certain avenues, that's his prerogative.
I find it however interesting, that wherever we look: Trump appointees are just not cutting it. Weiss is the latest example
